Thanksgiving Memories

Next week is Thanksgiving already! Wow, how fast this year has gone by! On the 21st, I will fly out to Kansas, where I will spend two weeks with my parents and siblings. It will be the first Thanksgiving that we have spent together in many years. I’m so very excited! I haven’t been able to spend a whole two weeks with them since my girls were little; and they are now 37 and 40 years old! So, you can see why I’m excited!

In thinking about Thanksgiving, it makes me think of the actual Thanksgiving meal and all the favorites we share together each year. One of my absolute favorites is my paternal grandmother’s french dressing. It is so delicious! Our family just loves it! I’d like to share that recipe with you today.

Memay’s French Dressing

 Ingredients:

  • 8 large Russet potatoes, peeled and chunked
    2 pounds Jimmy Dean’s sage flavored sausage
  • 1 large green pepper, finely chopped
    ½ cup of butter or more, if needed
    2 Tbsp poultry seasoning or sage, to taste
  • Optional 2 stalks celery, finely chopped

Directions:

  • Boil the potatoes in plenty of water until barely tender, not mushy. Drain. Place in large bowl and add milk and butter to make mashed potatoes.
  • While the potatoes are boiling, fry the sausage, green pepper, and poultry seasoning, in frying pan and cook until pink in the sausage is gone. Do not overcook. Drain.
  • Add sausage mixture to the mashed potatoes along with another tablespoon of the poultry seasoning and salt and pepper.  Stir well. Add more butter if the mixture is too dry.
  • Put in a large glass 9×13-inch dish (spray with Pam first for easy clean-up) and bake in a 350-degree oven for 30 minutes. No need to cover with foil, unless you see the top beginning to dry out. It should be okay though.
